You might have had Categories jailbreak app installed on your jailbroken iPhone to organize apps neatly. Sometimes after a firmware upgrade, the apps in Categories refuse to appear again. Here is a quick tip from a TiR reader on how to get them back.
If you upgraded a Jailbroken iPhone to 3.0 and are missing icons for apps you put in categories then go to Settings -> General -> Restrictions. Enable Restrictions and then Disable Restrictions and that should bring back your icons for your apps!
