Traditionally the iPhone & iPod Touch jailbreak involved a tethered boot. You would need a computer with your iDevice connected via USB during boot time for the jailbreak to work.
In the firmware 1.x days, there was a vulnerability which let people do untethered jailbreak.
@Comex has found an exploit to run an untethered jailbreak on all iDevices including the latest firmware 3.1.2/3.1.3 for iPhone and iPod Touch and firmware 3.2 for Apple iPad.
Usual Warning: Make sure you backup with iTunes sync. This guide is for educational purposes only – in other words – if it makes your iPad unusable (albeit rare), you are on your own.

Update: Spirit Jailbreak has been updated to fix a bug where it deleted the photos and also the iTunes error. Download the current version if you have had problems.

Troubleshooting
- On your iPad, there are many apps in Cydia that don’t work well for iPad. For eg. SBSettings resizes your iPad dock to iPhone dock size. So, try Cydia apps with care.
